Chef Connie spent 7 days in the backwoods of the Colorado & Utah Mountains preparing breakfast & dinner for 50 which included the racers & volunteers for the SJH 200 Race. No running water, no electricty, the old fashioned way.  It was the most challenging, incredible food adventure that I have ever been on and for me it was it’s own race.  I can tell you that proper sanitation and safety  food handling rules is an effective system whether it be in a professional kitchen, my own kitchen, or a mountain kitchen that was set up each day at each hut.
